I am aware of Kantos (great stuff), FrettedSynth (dev) also sound great but very samey (mind you haven't ttested them to the full) and SuperEel (couldn't get much of a soundout - the audio to midi function was very quick but only played some notes correctly in the scale)
Are there any more out there?

At the very top left of this page you see "KVR". Just below that is News.. Click on the Instruments, Effects Hosts Etc below that and fill in the search form. In effects the fourth option is for audio to midi converters. It should return <this list>
Also you can do a forum search on "audio midi" in the title only, which after some sifting will bring up other programs that can do this that are not in the KVR database.
However some people have good results with this, most actually don't.
