I was trying out Rayverb and I was getting terrible latency, essentially useless for realtime. I Googled around and I see things like "the host well compensate", or this or that tool will compensate. I don't really understand.
Is it possible to use Rayverb in realtime or should I look elsewhere?

Hosts can compensate for delays in plugins pretty well (that's called PDC or Plugin Delay Compensation) but that will only work OK when mixing, so it won't work in realtime.
There must be other reverbs out there with zero latency. Although... having a bit of latency in a reverb has never done any real harm. IF you have set it up as a send, and not as a insert. Then it will not affect the original signal, and the latency acts as a pre/delay for the reverb
