I'm going to differ and say it sounds fine to me - a bit reverb-y and distant in the demos, but I'm not hearing the synth thing at all. And as far as the distance thing goes, that just seems a function of where you recorded it - which would sit nicely in the mix for a lot of uses

Alright, it must be the demos. This doesn't sound as synthy as the demo

I think that the computer feeling of the MIDI files add an artificial feeling.

I still hear the plucky attack, in the chords, and in the single high notes. Do these waves all have an envelope as the wave you showed above? That would be weird, because it really sounds like fast attack, fast decay, sustain a few dB under the attack.

If you recorded them really closely, that might a problem too. Under normal circumstances, we hear the tone filtered by the environment (the box in which the pipes reside, the church walls, etc.). The direct sound reaches our ears, but relatively softly. I've attached .5s of the wave form of a rather soft sounding organ sample, and you can see several overlapping attacks, even though the sample itself is not really wet.

Perhaps you need to create a suggestion of more distance between the listener and the sound source, and/or add some low pass filtering.

I must admit the higher notes have a slightly shorter attack. The following is a test with four different attacks levels, do you hear any improvement as the attack is increased (part 3 and 4 seems)?

Yes you are right, this is very important and it's something I'm working on rigth now.
