Well I think GPU accelatration means that visuals are gonna be created using the graphics, not the CPU

Yes, GPU acceleration outsources most of the graphics to GPU and even provides better visual quality. If you choose to disable it, I'd also recommend lowering the FPS, just to save some CPU. Though graphics is always handled in the main GUI thread, so it shouldn't interfere with audio processing, in good DAWs at least.
