Mod depth for the filter cutoff is varied by the knob the right next to the input.

I'm working mostly with FX Grid devices, and one thing I like to do in some FX is add in noise in various ways to input signal. But the Noise oscillator is constant output, right? So how do you tap the noise only when you have an input signal of some sort?
Here's a simple trick showing how to let Noise generator output signals run through the system only when some audio signal is entering the FX Grid device. It doesn't matter how quiet or loud the input audio might be, because any value above 0 (-inf dB) will evaluate to greater than 0 and will output TRUE (1) from the > module.

Not sure if this is in response to me, but just in case...
This particular FX device is for a specific purpose. I don't want the Noise generators following any type of envelope. They are there just to output noise that I can manipulate in various ways and then layer into the dry sound passing through the system (along with some other processed layers). So I want them either silent or full blast. No in-between. No envelope.

Here's another trick for you, something I've wanted in Bitwig for a long time, now as a grid device with explanatory text. Essentially: MIDI-mappable effect selectors that don't require a hard midi mapping, a controller, or a loopback. I'm gonna go sequence the shit out of some effect chains.

Edit: I'm dumb :p I was looking for a sample and hold to solve keeping the Key On modules in their on state, but you can just use a Note Latch in Mono mode in the Pre FX slot of the grid, and it gets rid of the entire mod delay dependency.
Double edit: One more way to do it. Still finding my way around all the modules, but the routing is a ton of fun!

I think you could to this with regular devices and modulators, just put Note Filters in Note Layer device, narrow down each note in each layer if you want specific notes to trigger the effects, then I guess use Note Sidechain modulators on the effects layer, where you put your different FX in parallel and modulate each On/Off by different Note Sidechains that pull notes from those Note Filters you set up beforehand.

I have an Osc and I want to quantize the output of the Osc. How to do this?

If you use OSC without keytrack from midi and some irregular pitch source instead, then just use Quantize module in Math section, and hook up a value for step size of Quantizer, also dial the keytrack on the pitch input to octave-related value (12, 24, 36, etc) if not at max 120
