Unlike pipe organs, the air pressure exciting the reeds in accordions, harmoniums, pump organs, and harmonicas varies greatly as the instrument is played.

Yeah I don't think that would be a problem at all.

Hauptwerk does this. It has a wind supply and turbulence model that affects the tuning. I think they are also doing something with filtering as part of this to change how the pipes speak slightly. They also do a slight random detuning of each pipe when the instrument is started, reflecting how a real organ changes from day to day, depending on environmental conditions. Does anyone know if Organteq does this as well?

Organteq (version 1) has a per-note detuning setting panel. It will be the same detuning for each use, as far as I know. I think there's a detuning randomization command, but it's been a while (and I don't have the doc at hand). You are completely right. The name Harmonium came after Orgue Expressif at the beginings of XIXth century. That invention gained much attention from major composers of that time, since pipe organs lack the expression capabilities they sought after. In fact i think virtual pipe organs should include an optional system to control air pressure while avoiding the pitch fluctuations that make it unfeasible in the real plane (nevertheless in the virtual plane parameters can be altered in real time in order to neutralize those fluctuations). Organteq has been updated to version 2.1.
They've added 7 new stops, revoiced the French Romantic presets (again), and added a bunch of historical organs. It's once again free for registered users.
