To me it is not only the look. I don't think some pseudo 3d or photorealistic ui is the key. It is more the usability. The way things get grouped, controls get prioritized, where to find options, how many pop up windows do I have to open or close, is there wasted screenspace which gets worse when resizing, are there main controls which might just make sense in 1% of the time but take much space all the time, different font sizes, mouse distances between controls, ...
I agree the titanium style looks more promising than anything before but the other limitations of the user interfaces are still there.
