I was just reading about Toru Takemitsu yesterday, it occured to me he should be added to this list. Always loved his way of emphasizing the social contexts of sounds and instruments. Quite a difficult task to effectively evoke explicit memories with music.

Takemitsu's work is amazing. I wish I knew where my "From Me Flows What You Call Time" CD is, I only found the empty jewel case

No mention of Toshimaru Nakamura yet. This guy makes some really amazing music using nothing but a mixing board with no input. Sometimes with varying degrees of (but usually very little) processing.

His "No Input Mixing Board" (the first one) album is well worth checking out.
