For many years through the 1990s I used Workbench 1.3 and 3.0 with my Amiga 500 and Amiga 1200. It was pretty basic, but then it didn't need to be complicated. If you wanted a file manager, you would use something like Directory Opus. My favourite applications included Image FX, Photogenics, and Delux Paint and the mirad of soundtrackers besides games. You could strip the Operating system down so it would use less memory which was useful for systems without system expansions.
For me it's a bit of a nolstalgic trip but I actually still have my Amiga 1200 hooked up to my TV.

I had GeOS for my C64, but, never really used it, which is funny considering that every OS uses a similar UI now. 
Guess I never saw the point as a teen (aged 10 or 11) who merely started video games on the computer.

I have to say, the Amiga OS pic looks quite artsy (in a nice way)

overall i think MacOS Monterey. Haven't used Win 11 - and never a Linux distribution yet though
having said that: i think it's mind boggling how far behind it is in some aspects. especially everything regarding window placement / resizing full screen / maximized / hide/unhide / closing feels like something from at least 15, if not 20 years ago.
It also has some other quirks which seem a bit weird and rely quite a bit of keyboard shortcuts to achieve a fluid workflow, but those are minor things
