Bitwig have a great pricing
is not a sub you can upgraade whenever you want plus you get 1 year updates free
so you can pause and keep the version

Depends on how one defines subscription. I think of subscription as something you have to pay every month or you lose the use of it. By that definition, Bitwig is not subscription.

No. If you let your Upgrade Plan lapse you're staying on a version that you have (+get small bug fixes, e.g. for current v4.0 you'll get all v.4.0.x updates). You can then wait however long you need and only buy new Upgrade Plan once the amount of new features added justifies the cost (usually $100-120 on sale via JRR or Audiodeluxe) + you get 12 months of "free" upgrades from the moment you register the code in your account. Which also means you can buy Upgrade Plan on sale and keep it for the future, if you have some extra cash or are afraid they'll go up in price.
Rinse & repeat.
In contrast, when you stop paying for Reason+ or Presonus Sphere all you're left with is project files you can't open anymore and memories of fun time you had with those DAWs

So, I have HBO Max, I have always paid for it monthly, which is a subscription. I didn't say Bitwig was a subscription, I said the support was a subscription.
I work with cyber security, and primarily with two vendors. They both offer one or multi year subscriptions on their services and support.

I think you still get support from Bitwig even with an older version. So Bitwig support is not a subscription the way various companies do it.

A subscription you would have to cancel, as it renews automatically. This is not the case with Bitwig. If you don‘t go to the Kiosk and buy the new issue, you are left to read the old ones…
