He probably means that when the left section is open on the gif there is 2 more columns ....one of the 2 can be collapse with the small triangle at the right of the yellow dot.

The 'follow section' is the clip launcher follow action configuration that's right of the leftmost column.
So, now he is hiding two columns, but you can collapse one of the two columns (the right one) he is hiding.
What I really, really, really like about Live is that they don't use 7539px wide images for their keys.

Also the black keys don't touch the grid, which makes it even more useless.

Oh ok! I understand now. Yes, it is nice to be able to fold those panes, otherwise there would be a big useless space when the editor is half screen or more.
I have just watched a video about the new features in v11. I'm not sure I would use most of them, but they might come very handy in some situations. I don't have MPE device and I'm not planning to have any. I might use the "takes" features, but I dislike the combing in general. Anyway, the new effects are very cool and there are many enhancements overall, which is great

Simply want to say that I'm somehow impressed by the update. After over a month of testing the beta my initial disappointment is gone. I still wish we would get bounce-in-place and macro-reorder-function but anyhow I'm satisfied with Live 11. Still a bit pricey but well Corona is in full effect and I like Ableton.

Comping
Never had a DAW with comping so never missed anything but it is a really cool thing. It works super smooth on audio and midi. I don't use much hardware but for audio I use comping for sound-design in midi for recording
Piano-roll
No time to go into detail but the rework of the piano-roll is really good. It feels tighter, more flexible, easier to use and to look at
Effects
While I never got really warm with Echo I enjoy the Hybrid-Reverb a lot. The Redux overhaul is a super addition for more coloring options. The Spectral effects are a lot of fun to use. The new Flanger/Phaser got a big improvement. They sound much better and the two new options Doubler/Vibrato are again a great new coloring option
GUI
The theme is really on point. Always made a custome theme for myself but this time Ableton nailed it for me – atm no need for adjustments of the theme. Plus everything looks a bit crisper. And I do not know if it's my machine only but plugins windows are opening faster and graphic intense plugin gui's are smoother
Stability
Live 10 was always super stable and Live 11 is so too. Of course over the beta period I encountered some bugs and crashes but since mid-January (don't have the version number at hand) it there seems a good point of stability reached. Max4Live also seems to took another step in terms of integration feels bit more stable then in Live 10

CPU
First, over the beta process the CPU consumption/stability got very much improved. There are still mysterious cpu-spikes here and there but I'm sure those will get ironed out before release. While I cannot say Live 11 is using more CPU in general it seems there is a bit of different way of handling things.
Old Device GUI
While some devices (Corpus for example) became a new interface other (Analog) did not. Would also nice to have a slightly new touch on Glue. Nothing ugly but it feels inconsistent.

For god's sake please Ableton give us a Operator MK2. Whether 4,6 or 8 OP's I do not care but Operator in a sleek expendable interface like Waveform would be a huuuuuuuge thing - at least for me.

A tool to make own python midi-scripts for Live - There was always the UserConfiguration file but somehow never got attention from Ableton and only delivers very simple commands. So would be crazy if they pick that up and put it to another level. Would also fit to the modular approach of Live in general.

Update is for me now no question anymore. After beta-ing I'm happy to update. Yes, it's a bit pricey but that's not to discuss here for me. It's a great update and it feels like Ableton is handling there business philosophy right. Like with the other updates of Live they stick to the whole concept of Live while improving the workflow and possibilities slow but well thought out. Things feel right in place and still not bloated or unnecessary - a big strength of Live imo.
Live 11 will improve my workflow a lot as it gives me some new tools at the same time it expand my workflow by giving me new tools/perspectives. Live maybe grows slowly but in always in a mind-full way.

Also the black keys don't touch the grid, which makes it even more useless.
And scales that are just displayed at the keys and not in the rows of the editor like in Live. Specially useless with the black keys, almost invisible and irritating (grey is out of scale, but black and white is in scale, I always want to use the grey black keys)
Ableton really gót Live's MIDI editor and MIDI tool right!

Bounce in place and an updated Operator with a big editor display like in Wavetable and more OPs and partials available would be fantastic

Is 'bounce in place' even possible in Live right now considering tracks can be either MIDI or audio? But that would be awesome if possible. It is the most requested feature indeed.

As in a destructive bounce that replaces your audio with your audio post processing? Wow, I’d hate that.

What I do is just record the data to new channel from the one I want... of course its a setup and not a rightclick-leftclickmenuitem easy, but not much more time taking except if the stuff I want to render to audio is long as this is realtime.
Then again another workaround is just to render the channel offline.
Not much updating from 10.30 to 11.x for me, maybe 12 then.
