Ironic that you say the second bit after the first, because the most convincing surround sound effect is indeed experienced with nothing more than a normal pair of headphones. Binaural recording captures 'surround' information in unlimited planes/trajectories, whereas 5.1 diffusion gives you just a 2D plane, often with noticeable holes in it if your speakers aren't set up precisely right.
