Am I missing something or is it only possible to use one set of stereo inputs from my soundcard? I just spent about an hour with the demo trying to get audio from different soundcard inputs to feed individual racks with no luck whatsoever...If I am missing something, can someone give me a quicki abc of how to do this?

You haven't missed anything but it is a convoluted. Try this:
* On the setup tab, click Configure Master Bus
* From the presets in the top right, choose stereo pairs
* Place check marks next to however many channels you need.
* Close that dialog
* Go into options and on the audio engine page, click "assign audio channels" to map master bus channels to physical inputs/outputs
* Finally, you can then assign plugins to individual master bus channels by selecting Audio Channels option in the Tools menu in the plugin slot.
Like I said, it's convoluted and it comes from originally designing this to handle multi-channel audio more than multiple input pairs.
That said, improving this is on the very top of my list of things to do next... the only reason it wasn't done in 2.0 was to not upset stability.
