I've always been told that you have to wait for cookies to cool off or even eat them the next day at a party or something... I think that's missing out on a key beautiful thing which is cookies hot out of the oven. What do you prefer? (Just to change it up for a sec and a minor laugh).

Unanimous. I rest my case! Ha. (Just had cookies out of the oven btw... was delish!)

I would prefer an option for "All the Above." Start at the cookie dough stage, and progress through warm to day old.

When still warm but not hot.
For most cookies, ideally you should wait a minute or two so you can remove the cookie from the baking sheet without wrecking it. Some heavily sugar-laden cookies can burn your mouth or hands if you eat them before they cool somewhat -- and hot sugar sticks to you, making the burn worse.
For bread it's more critical. If you slice bread directly from the oven it won't be right. It must cool somewhat before its internal protein structures are properly set.
Just about any baked goods should be transferred from baking sheets to cooling racks not long after being removed from the oven, so the bottom surfaces won't be damp, which can ruin a cookie's texture or bread's crust. Cookies left on the sheet too long can be nearly impossible to remove, especially those very sugary ones.

I made a salmon the other day and had this BIG plate that I put on the counter and the weight caused it to fall so I tried to SAVE it because it was a nicely broiled salmon and I stuck my hand right into the hot center of it. OW!!!! I screamed an awful noise. I did save about half the salmon and ate it though... that's called the squealing pain diet!
Your cookie story reminded me of that Meffy. But yeah you have some good points there. Although I don't mind if the cookie falls apart. There's something about a hot cookie that really makes me happy... that said when it just cools off and starts to get crispy on the outside and chewy on the inside with melted chocolate chips - there's the ultimate cookie to me.
