Agree to the most. And I only own an iPod so far. My iPad will arrive this month

I have been using tons of music apps on the iPad. There is just something about the touch screen I find more appealing though less powerfulnto be sure.
A quick rundown:
Heavily Used:
NanoStudio - best overall DAW on iOS
ReBirth (despite the lack of updates!)
Mixtikl - Generative magic - also have the desktop version
GarageBand - finally exports to iMac version and from there to Logic Express!
ThumbJam - Both standalone and as a killer wireless MIDI controller for Logic Express
Korg iElectribe - Great for beat making and does Audio Copy/Paste
BassLine - because Everybody needs a 303 and unlike ReBirth, this one copy/pastes
Less Frequent but really cool:
Korg iMS20 - complicated but complete replication of iMS20 - sounds fabulous
SynthX - Cool interface a la MorphWiz with with ARP engine behind it
MorphWiz - Innovative interface with somewhat limited sound potential
Reactable - Accurate rendition of the $10,000 hardware table version - used by Bjork and really cool way to put together modularly a synth sound.
CrystalSynthXT - Since I use CrystalSynth AU for so long -same synth on iPad
SynthTronica - A very cool formant/vocoder based synth
Moog Filtatron - Still learning it but fun to twiddle
Xenon Studio - Another DAW - more sequencer based
technoBox2 - similar to ReBirth - 303, 808 and 909s
miniSynth Pro - nice basic subtractive/FM synth
Seline HD - Weird instrument optimized for iPad
omGuitar - Great strumming guitar on iPad
improVox - Vocoder - so so
bleep!Box - sequence based multi-tracker
Curtis - WEIRD synth that bases sounds on formants applied to waveforms
NLogPRO - Great synth with subtractive, FM and tons of presets
Jasuto Pro - Difficult modular synth - lets you build your own instruments
