I honestly can't tell if the whole song is in the same time signature, or if it's mostly 4/4 except for this part:
It starts at around 2:31 and again at around 3:15. Am I just imagining this?
Weird time signature change in this death metal song?

There is a change in meter during those sections while the tempo of the beat stays the same. It seems to me to go into 11, where the rest of the song could be thought of as 8 or 4. It is a pretty jarring change.

Nope you're not imagining- it goes into 11 as Nystul says, They might be conceiving it differently, like dropping half a beat off 12 or as twice 2+3/2, or as a worded rhythm (like "shake my shaggy stick" for 5/4") or something, that riff sounds like 11 eighth notes long though. Notice that 44 counts of 11/8 would fit 11 counts of 4/4 but the riff only happens twice, so they're still coming in on a beat, but the return to 4/4 is half a measure offset from how it began. It's really well done IMO, nice.
Another thing to notice is that when complex rhythms are well done, you tend to just go with it, and they're actually harder to count than if they're done in a mechanistic and obvious fashion (look mom, we're playing in 11!).
