Three that I can think of off the top of my head are SynthX, Morphwiz (Samplewiz is similar but still more keyboardy), and the ribbon controller in Konkreet Performer.
What else is there? I think the iPad is just made for this kind of thing, and it's almost depressing how many synths expect you to aim at and hit wee little keys exactly.

SynthX is a blast to play with, but I must admit as a keyboard player I like a keyboard best of all. Agree that the on screen one is limited, but it does work. I greatly enjoy my Akai keyboard, just plug and play and works with just about everything.....
I don't have any of these, but they look non-traditional for sure....

Let it never be said that I'm denigrating the joys of a good keyboard. But a real keyboard is tactile - you feel the keys, it's a certain size, and unless you're a complete noob you don't have to struggle much to hit the right keys for a simple melody. A featureless sheet of glass though, calls for a different strategy I think... I'm really hoping the Sunrizer dev follows through on his plan to make a SynthX style touchboard type interface for it.
Anyhow that Airvox app looks super cool. Too bad it doesn't appear to do network MIDI. Think I'll get it. Thanks for the tip!

ThumbJam can do some of that stuff - X-Y positions can be assigned to different paramters. You have the option to have it step note to note or glide. Similar to Morphwiz (which is really cool!)
