I'm thinking of building a new powerful and fast computer which would have the capabilities of running several large piano libraries (Ivory American Concert D, Ivory Steinway, Ivory C7, Ivory Uprights and Galaxy Vintage D) I'd be getting a fast i7 processor and probably 32GB ram (or more), running Windows 7 64 bit ultimate.
Would Cantabile be able to access 32...or 64gb of RAM?

Cantabile is a 64 bit app and can use all the ram that you can install in your computer .... and then some.
As far as I know, Windows 7 Starter is limited to 2GB, Home Basic to 8, Home Premium to 16, and Professional and above are 192GB

...just to add that even with Cantabile 32bit version you can make use of ram > 4GB by using jBridge.
jBridge separates plugins (even 32bit) from Cantabile so that each one can use up to 4GB, in parallel to Cantabile process.
