just got an iPhone & wanna get rid of the cheezy earbuds to plug-in proper headphones, possibly jack in my guitar or ePiano . . .

For practice it's ok, but there's still no studio or at least stage quality. IK can you do it? Build a audio/midi interface with the new lightning connector? Or are u waiting for something...? 
Edit: I use tascam iu2 for iphone4s but seen its not working with the new lightning connector...
I use irig rarely now - the trick is to set the iPhone's volume really low to avoid crosstalk
