What is the best amp sim for the iPad?

The best?
For what type of music? Do you need it to have any specific tools?

I usually recommend using a convolution reverb since there are so many high quality real room ambiences available online and you can add a lot of character to a tone.

Auria has a nice convolution plugin. You can add your own .ir files using iTunes or iFunbox to manage the files.

Some are perfect for use as cabinet.
I also recommend trying to make some yourself using Reaper's deconvolve utility. It is easy to use, but you do need a few things like a nice pair of condenser mics.

Bias for amps, but the best combo (amps, fx, cabinets) is tonestack

Easily AmpliTube and BIAS I would say personally. Obviously YMMV and others opinions will vary
