Will amplitube iOS recognize a stereo audio interface?

I'm using a focus rite 8i6.So far, garageband is the only app that recocognizes
imputs 1&2 panned left and right.

It will allow you to choose between on of two inputs on a multichannel interface but will not record them simultaneously.
