If I had a sample site and wanted to sell samples online, what would be the best platform for hosting/managing the licenses and assets?
Off the top of my head, there are Sellfy, Gumroad, and Shopify (I kinda like this one). Are there any others that are worth checking out? Bonus points if they have a network where products can be discovered through search or browsing.

I've done Gumroad for a few months before moving to downloads on our own site and direct Paypal hookup. Worked OK, probably zero discovered through search and browsing, but good if you need to deliver updates or bugfixes to customers. It's good if you're not sure you're going to sell much, and don't want to risk paying monthly fees, it's a reasonable choice, though the per-sale fees they take then are fairly high. Only available in countries that support Paypal. Quick and easy to set up, that's for sure.
I know some smallish devs also use Sendowl, which does have a monthly fee. Some other solid-looking choices were not available in Poland so I didn't look at them more deeply.

A fixed monthly fee would be preferable to a per-transaction fee, wouldn’t it? Keeping fees to a minimum would be good.
I’m a web developer, so self-hosting a platform isn’t out of the question, but I’m not going to write an entire e-commerce system from scratch.

You have to pay a per-transaction fee and a percentage of each transaction on top of the monthly fee, it's just that in the monthly fee version the other fees are lower, and you get some extra features. So, which one ends up cheaper overall depends on how much you sell. There's a free one-month trial of the monthly-fee version anyway.
