Ableton and M4L offer many midi and audio effects and applications to map VST parameters which can be controlled via lfo´s, step sequencers or even randomly.
But I can´t find a way to map actions like next/previous preset, or change the filter of a synth, the wavetable, waveform, sample etc.. Isn´t that possible?

It is the plugin that has to expose the parameter to the host.
That is, the plugin's dev decides what can be automated or not.
Most plugins don't expose next/previous preset for the host.
If you have Clip Envelope Box open in Session View, or you are in Automation Mode in Arrangement View, and you click in a parameter (knob, slider, etc.) in a plugin, its automation envelope will show up, IF that parameter is exposed to the host.
In Live itself it is easier, you just have to enter MIDI Map Mode (ctrl+M/cmd+M), it shows a color overlay over the MIDI assignable elements.
That is, the plugin's dev decides what can be automated or not.

Yes, I know everything about MIDI assignment, thanks.
I thought there were other ways to do the trick, like applications or M4L extensions which can record and playback the mouse clicks I do (navigate to a specific dropdown menu to change the filter or something like that..)

The easiest way would be to have multiple instances of the synth in an instrument rack and fade between them. Not sure your exact application tho.
