There I was, slightly insomniac and accordingly loopy, clicking through interesting things, and for some reason I stumbled upon Scatman John, aka John Larkin. Turns out this guy was an accomplished jazz pianist for most of his life before he got big. I stumbled upon this song:
And ... I love it. It's heavy, fast, very visceral, and just great to listen to.
It's some form of jazz, but it's not any kind of jazz I've ever heard (granted I'm not really a jazz guy). Where would I have to look to find more of this kind of stuff?

To me it sounds like very dramatic and slightly experimental jazz. Verging on Frank Zappa / Captain Beefheart kind of stuff but more traditional jazz oriented.

I would call it Jazz just because the folks who made that music tended to be quite a bit into the greats of the Jazz tradition. But as others may have already pointed out, whatever you want to call it, from the 1960s on musicians were looking to do new things which involved incorporating other styles, etc.
From the time of the release of Something Else in the late 1950s, Ornette Coleman was a significant influence on those seeking new paths.
And for some reason the tune you posted also reminded me of George Duke's version of this Zappa piece:
