Bonnie Raitt’s Hammond player, Mike Finnigan, played with many country, blues, and rock bands. Mike died in Aug 2021 and was a very fine player. So many others great country songs / bands with excellent Hammond players. Suggest you do an internet search as the list will be very long.

A bit off topic, I got NI Vintage Organs for that sound.
An Hammond organ for sale @£85 in a charity shop the other week, S70 1RR
The picture turned out poor, might be a bargain for someone.

Noodlist- I understand NI Vintage and other non-tonewheel clones mimic the classic sound pretty well, but an A-B test side by side with a good B-3 and Leslie 122 would immediately make you shake your head.

Maybe it does not fit to "Country and Americana music" but Garth Hudson (Canadian). "Called the most brilliant organist in the rock world." Or John Hiatt?
