One thing that struck me seing demos of Wing was that SD cards could hold if it was 64 tracks.
But can you record, use plugins, automate and do all things you expect to?
Leave out computer is what I mean.

you can record to the sd card, with the builtin plugins and without the coumputer yes.

Having a Mixing console record to a hard drive adds the functionality of a tape machine.
A DAW, on the other hand, is considered a "Digital Audio Workstation", which has more functionality than recording and mixing.
So wouldn't call the WING a DAW.
