”Chords and melody”...
If you rely on your ears, how to harmonize (chords) your melody, is just a matter of trial and error.
This is how people, who don’t know any theory, have written great music (e.g. Lennon & McCartney and many others).
Basicly chords include same fundamental (or any) notes as the melody you play. You change chord when you got new notes in your melody. But this is, of course, a simplification. You can play several different chords over the same melody note. Whatever sounds right to you.
Knowing something about keys, tonality and scale degrees (you know, tonic, subdominant, dominant etc.), help you to know what rools to break
