Ripping speech samples from Youtube etc - legal questions

My music doesn't use any vocals but sometimes I rip some speech bits from youtube, like sci fi movie quotes, or some sсientific talks and the like and include them into my tracks. I've been told that if I release my tracks via a label this can cause problems, e.g. if I can't present some kind of proof that the samples are not copyrighted the track may be not admitted at Beatport.
How do I know that the speech/voice sampels are free to use (unless they come from sample libraries or stock sites where this is explicitly stated)?
And what steps do I take to "clear" the samples I've made myself (I guess it's barely possible for a regular bloke like me if I sample quotes from a Hollywood movie, but if the original video is distributed under Creative Commons and the like)
E.g. Al Pacino's Devil's Advocate quote "Look, but don’t touch, touch, but don’t taste... I'm a fan of man" appeared at numerous commercially released tarcks by some big artists, how do they do that? Or they just don't care?

I doubt that samples would be cleared before the context of use is known, but also I assume that clearance goes hand in hand with arranging for payment to use the sample.
