I've heard people say there's no real good erhu out there, though there are a few which are part of larger collections. There was no kora until Sonic Zest sampled one. What other instruments are yet to be sampled in depth?
For example, any bass, contrabasss or subcontrabass saxes, or subcontrabass flutes?
Early XX century drum kits with traps table and temple blocks and pre-hi-hat sock cymbals?
Ampeg Baby Bass?
Baroque viols in sizes smaller or larger than gamba?
Sure, some of these are niches there's no money in in either real life or sampled form. But just thinking about this and how long the list is at least as far as instruments made in significant quantities, and not one-off instruments (though a few of those have been sampled, too, from ancient lithophones to weird experimental contraptions). This one-off conversion which sounds really cool is what got me thinking about all this...
Instruments which haven't been deep-sampled yet, or niches to fill

I'd like some more viols - have Ben Osterhouse's Viol da Gamba, there are a few others I think.
A decent middle eastern style string library would be good - don't like any of the current offerings and many are loop-based, which is useless to me.

As in violin and cello played in a Middle Eastern style, not Middle Eastern string instruments such as kabak kemane? Either way I'd be all for it...
