Also impulse responses? 
Classical & jazz recordings tend to be unaltered natural. Put musicians in a good room, record them with individual close mics, perhaps add a ambient mic for some room sound.
Can you describe in what way you want to change the sound? What is so specific about classical & jazz? Is your source a natural recording or from sample libraries?

An emulated emulation - interesting concept...
With Jazz or classical you would want the unaltered signal as clean as possible. Any vocal line you recorded probably has its recording mic already printed in... you can still crush it through any valve preamp emu, why not...

Antares has a great plugin for mic modelling https://www.antarestech.com/product/mic-mod/
If you wanna go down the route of hardware+mic emulation, Antelope Audio edge series or Slate digital VMS are quite well known for a cheap budget. You can definitely get a great clean sound from them.
