The highest form of knowledge is empathy, for it requires us to suspend our egos and live in another's world. It requires profound, purpose‐larger‐than‐the‐self kind of understanding.

Not comprehensive, but here's some:
Blade Runner
A Clockwork Orange
Predator
Underworld
Inland Empire
Hanna
Tetsuo: The Iron Man
Requiem For A Dream
Fight Club
Birdman
Battlestar Galactica reboot (not a film per se, I know- but some awesome music)

Lord of the Rings, Howard Shore. The movies bore me now, mostly, but I would say that Shore's soundtrack was what I've listened to most, usually when I'm playing Civ on the 'puter, since 2002.
Master and Commander…
The Godfather
I started payng attention to soundtrack music when the X-Files were on.

I guess some of the old reliables for me are:
Alien
Blade Runner
Assault on Precinct 13
Clockwork Orange
Apocalypse Now
Midnight Express
Full Metal Jacket
The Thing
Escape from New York
Taxi Driver
Duck You Sucker (probably Morricone has his own category to me, way too many great soundtracks. Orca, The Mission, pretty much most of his Spaghetti Western stuff, the crime stuff, etc).
Requiem For a Dream, Book of Eli, and Master and Commander were 3 good reminders for me from posters above.
Tarantino use's his music choices very effective to me too.
This is the type of thing that once you post it, you probably think of 20 other things you could have posted.
Also, there are loads and loads of things like the original Texas Chainsaw Massacre opening theme, or hundreds of other horror soundtracks, old cartoon background music (Spider-man from the 60s comes to my mind quickly), loads of 70s movies had awesome and interesting soundtracks to me.
