Spot on emulation except even better,as you can personalize each patch or bank to have a certain kind of grit or cleanliness to it.Making it like having multiple DX7s , I can't believe the price is so low.
The UI is perfect if you ever worked on a DX7 this is a complete upgrade,finding your way around is completely elegant.

That looks pretty good. Maybe it would be nice if you can pick the colors you want for the knobs, background etc., or just have a limited selection of pre-configured color themes.

That looks pretty nice actually.
The skinning is rather trivial with our styles.xml feature in our UI folders. But we need to add a user skin drop down and maybe add two factory ones. If you try chipsynth SFC, it has 4 skins. We just didn't have time to add a few in OPS7. A light one, close to what you suggest was indeed in my head.

David seing that all the tx81z parameters are there in the extended section are you going to implement tx81z sysex import?

Yep. This. I know a grid of numbers maybe doesn't look "cool", and might initially appear unfriendly to someone who lacks minimal understanding. But, as a clear and concise way to present a lot of complexity in minimal UI space, you're not going to better it. Though FM7/8's implementation could've arguably been improved on slightly with more usage of colour coding info for routing.
