How to best Extract polyphonic midi from audio file

I have cubase 9.5 pro, and it will only extract monophonic midi from an audio file.
I see Ableton can manage multiple voices, and I have watched tutorials about it, but not tried it so I don't know how it is compared to other programs. I have tried a few independent programs but could never really get them to work. Any suggestions about this?

None of them are probably perfect in every situation. Melodyne is an option. Or you can try to get monophonic audio stems with Spectralayers or Izotope RX.
