I’ve been trying Ableton 11. But I can’t find a way how to open Ableton’s own plugins from the down to bigger window/pop up window - similar as 3rd party plugins.
I know I can change the “zoom” from the settings to get the Ableton bigger. But it zooms everything. I would just like to open individual Ableton’s stock plugins.

Most devices don't offer that. Those that do - e.g. Wavetable, EQ-8 - have a little triangle in the upper left corner.
The whole point of Ableton is that plugins don't clutter the screen, obscuring other areas
Also, check Bitwig - their devices are bigger, have bigger controls and more of them have pop-up windows.
