Hello Mungo-Parks!
Welcome to this forum!
You can do that under the Settings / VSTi tab. After you added the instruments, they will be available in the instrument menus. It is possible to scan plug-ins but I found it too fragile: a badly behaving plug-in may crash RapidComposer during scanning.
In less than two weeks you'll be able to use VST3 instruments too. A screenshot of the latest version:
Contrary to VST2, VST3 plug-in scanning is reliable. And the tab was renamed to "Plug-ins".
Thanks,
Attila
