Hi,
Logic has nice binaural panning tool, and I wonder if this might help create more depth in Techno tracks, or would it sound bad in mono club systems?

You could fool around with it on stuff just not on the kick or bass or vocal. It won't create more depth it will just sound off.

Forget binaural panning if you mix for speakers. Binaural panning is for headphone-mixes only. You can use panning based on interaural time delay gaps but this leaves you with ugly comb filtering when mixed to mono. A compromise would be to mix interaural intensity difference and time delay gap to a degree that masks the comb filtering just enough (something I like to do).
