Not necessarily simple, but Carbon Electra is a quite good and capable one panel synth.
Ana 2 also, though I don't have that one myself.
TAL Noisemaker. Tone2 Firebird/Warlock.

Saurus by Tone2.

Not sure how much is "hidden", but it's basically on one panel.

For a free alternative the venerable Synth 1 deserves a mention.

Nakst Apricot. Not quite one panel but almost. No differential unison engine but if you use Bitwig you can achieve the same effect with voice stacking

Hive2 but there are hidden panels (FX/arp/wavetable index optiond) and of course the mod matrix. But even so, most of important synthesis parameters are immediately available. And it sounds great with very low CPU usage.

Ask yourself this....if someone if looking for "simplest one panel subtractive" do you think they want to faff about with voice stacking in their DAW?

If we're going to move the goal posts of complexity we might as well just recommend DUNE 3 since it is the evolution of DUNE 1.

Apricot is a great synth but one does require a CLAP capable host. I suppose it would have been a good idea for the OP to list his OS and DAW(s) to save us from suggesting synths that he might not be able to run.

Good points. I keep forgetting that Nakst synths are not VSTs when I recommend them.

I haven't used Dune 1, but I was expecting Diva to get recommended here :)
It might be just what you're looking for, even if little bits of its functionality require tab switching.

I'm actually developing a synth where the main design goal for the user interface was pretty much that: all on one page, no hidden panels or tabs, consistent and simple to use. No FX section but other than that is still aiming for some flexibility when needed (2 filter slots, can switch to do 4-op fm, ...)

It's not released yet but might be early next year or even this year still.
Shoot me a DM if you'd like to know more, I wouldn't want to hijack this thread!

If the issue is getting a copy of Dune 1, you can get a "lite" version with any copy of the magazine Computer Music. It's actually quite robust and stands up on its own.
