I have the Iona vst from AIR tech. It's a lovely sounding SH101 emulation that was dirt cheap over the hols.
But it has no Midi learn for some odd reason. Not the only plug in ofc.
I just acquired a new midi controller one that has assignable knobs so I can twiddle cut off etc.
The only way I've found to do this is to open up the desired parameter as an automation lane, click on the assign part to locate the relevant CC number, then assign that in the other window (the one on the lane with the sine wave icon). This is a really tedious process.
I have Valhalla Delay but it too appears to have no Midi learn, and I can't see anyway to assign a knob to that to control, for example, the feedback.
Is there a better way around this?

Load the plugin, click on Param go to Learn, select the control you want assigned. Reaper will pop up a dialog, move the knob on the controller you want assigned. Or use Realearn can do that and much more.

^ Exactly this.
If you want more, Kenny Gioias videos are great, balance of simplicity and detail just right imo.
