Am I missing something or is this not present.
For instance, the CM piano LO plays the same volume and tone regardless of velocity - is this just the default setting ?
Presumably it's not got multi-velocity layers ?

Well, if you have a look at the patch you'll see that all the synth settings are in their default state (if you turn off the LFO as previously advised - seems like a glitch on CM's part). In the keymap editor there are clearly just a handful of zones stretching from 0 velocity to 127.
If you wanted to make the patch velocity sensitive you could set EG1 DMOD source to VEL and increase the Depth control to around 75-85%. That'd give you a good volume velocity response.
If you wanted to do the same for filter cutoff so the tone varies, switch on either the LP12 or LP24 filter, set cutoff to 0, set keymod fully right and set cutoff envmod to max. Then set EG2 DMOD source to Vel and adjust the Depth control to suit.
