How does this deal work?
I got the engine only upgrade on another purchase, but if I want to get the sounds only upgrade later - where do I order? There doesn't seem to be an option on eSoundz for it.

You can get it for $199. I think you need a special link to it from requesting it from sales@esoundz.com
Typically though you get a better deal buying the regular upgrade if you want the sounds. The only benefit to doing it separately is just the timing of it and taking it in steps.
The engine upgrade deal by the way, for anyone else, is only going for another two weeks and then the promotion is over. You can add the full engine to any Expansion Tank 3 pack or the Combi Drum Kits or Sonik Synth 2 for just $99. until December 31, 2004
