I RTFM'd, but I didn't see how you assign an envelope or osc output, etc... to a source.

All the envelopes are pre-assigned; you simply have to activate them. In the upper left hand corner of each envelope is a little triangle. Clicking on that will give you a drop-down menu of the other available envelopes affecting that Osc or Filter.
The Pitch Modulation slider must be above 0 for the envelope to work. The Phase Envelope will have a very different effect on samples compared to single cycle waves. You can further customize you modulation using the Velocity/Aftertouch box. Again, click in the upper left corner to see the available options. The slope in the box affects how Rhino uses these modulations.
Don't be afraid to experiment. Once you try it, feel free to ask more questions.
