Learn about pentatonic scales.

Just type pentatonic scales in google, you'll find a ton of stuff.

There are quite a few styles of traditional Japanese music, using different scales & melodic conventions.
Pentatonics are a good place to start.
Japanese music is generally believed to use a Pythagorean tuning.
I don't know about Egyptian, but it's thought that the Pythagoreans got "their" tuning from Egypt and/or Babylon, so Pythagorean's a good bet on that one too
