hi how can i add master to the racks
so that i can control master output levels, etc.

heres how ya do it
make new rack >> name it MASTER >> link all other racks to it

Indeed, that's the way

In MU.LAB 2.0, the very default session (when you do File -> New) will auto setup such a Master Rack

I believe it is... I guess it's so that his handle is more identical with the whole mutools operation.

We'll still be able to have new.MuSession with our own setup, though, I assume? (Mine's already set up with four channels going to a master.)

Sure!

If you save a session as "New.musession" into your MU.LAB folder, that one is opened whenever you do 'New Session'
