You sweep through the 16 waveforms per oscillator with the knob called "Wave". By default these are all sawtooths though.
The waveforms can be edited and loaded at the bottom of the window, in the OSC1-4 tabs

Read this to get a better understanding of what is going on there. http://en.wikipedia.org/wiki/Wavetable_synthesis -- Then when you've read that go back and read the section on the "OSCillator module" and "waveform editor" in the ZEbra manual. Then you will be impressed that Zebra goes a bit further than the conventions.
