A few days ago I purchased a UL license. I apologise if my question has a rather obvious answer, I searched around a bit and was unable to turn up this information.
I'm trying to make use of the multichannel rewire feature. In Renoise (slave) I have three tracks each sequencing a VST. Track one outputs to 'Bus 01 L/R', track two outputs to 'Bus 02 L/R', and track three outputs to 'Bus 03 L/R'.
How can I route the audio in Mulab so that each track is sent to a seperate rack?

The quickest way is to add Renoise directly in the Modular area rather than a rack. You can then attach the bus outputs like this

Another option is to add Renoise in a MUX which allows you to set up your own little modular environment with mixer strips/racks/effects etc. The MUX can then be loaded into a rack.
