Wormwood might not be a good idea, although the ribbon reminds me of a worm or a snake.
Are you attempting to make the instrument reflective of Renaissance instruments, or is it supposed to be that type and more?
If you call it Scarborough Fair, maybe make the design a bit more festive somehow.
Flourish or Flourishes can be applied to any type of music. However, the GUI artwork may feel pressured to live up to such a name.
Wirewood/Woods&Wires = I don't think so...sounds colder like nuts and bolts.

honestly I really like "Scarborough Fair", as it reminds me of the many versions of that song,
and thus many kind of plucked instruments.
Sherwood Renaissance, could be nice as well, even though sounds limited to Renaissance instruments, and it's not

"Scarborough Fair" is a good name.
The first GUI is too busy and the second one's too static. And i don't like cheap wood imitations. Wood needs style (remember the Nomad interface for the String Synth).
I like the Marimka GUI. It's functional and it works well.
... and please don't call the instrument Sherwood Forest or Robin Wood!

I think the gui needs less styles. Some elements have an 8-bit pixel amiga look, some have a win 3.11/95 look, the audio flow has an isometric "sim city" look. Some gui elements are pixelated, some are very flat and some stick out with shadings (but plastic), some things look more worked and some look less worked due to the different textures & shading.
It's this varied style clash that makes me feel discomfort. I think the GUI would be much stronger if there were less styles going on at the same time.
Also I think the color scheme needs more balance. If the purple in the key editor where to be replaced by a brown/earthy yellow there would be one less colour to bother about. I think that that would make the overall "nature"/wood theme stronger. Also I think the wavy/curvy embellishments does not fit the isometric/boxy feel of the other elements.
One way to make it more themed is to have all texts in a pixelated style (but that can be hard to read...)

Precious comments you give, "varied style clash" was indeed the idea I started from,
the first idea was to put wood bits over a flat LCD, but then I had to make compromises
for usability and the result is still not great, anyway I think I will go on from

Right, using pixel font everywhere is not easy to read, I tried.One way to make it more themed is to have all texts in a pixelated

Yes, another issue to solve, but I don't like the too even and smoothed GUI designes you see these days,
balanced contrasts are what make a design interesting for me.
