How do you get automations - like volume levels? I understand you need a special type of track and everything, but i don't know how to do it! I don't know how to connect the tracks so that the effects only work with certain things (like the volume only works with one track!)!

There are no special types of track.
A track is just a container for parts.
Parts come in just two flavours - audio and sequence (which holds events). Automation is a series of events, so you need a Sequence part. Draw one in on and make it target the Module you want to automate -- that is, if you want to automate a VST, you don't want the Sequence Part targeting the rack holding the VST, you want it targeting the VST itself.
Once you have the part targeting the correct module, double-click it to get to the sequence editor. Down the bottom is a lane with "All Notes" written in it. This tells you what events are being displayed. You want to pick the automation target within the Module you've chosen to automate. If you click the lane header (i.e. near where it says "All Notes"), a menu will appear from which you can select the various automation targets.
You'll see a couple of sub-items - Controllers and Parameters. "Controllers" is for generating MIDI events. "Parameters" is for VST Plugin modules' parameters. It's probably this you're after. Open it up. The names shown are supplied by the VST Plugin itself, rather than MU.LAB, so I can't tell you what to choose in general. You have to know what you're after (or try it out).
OK, now you've picked the automation target, draw in the changes in the lane next to it (as usual, hold down control, click'n'drag).

I want to use one of their things - I have chosen Lab74. I've premade a tune, and have found the Volume option. However, this makes NO difference when I play back.
On one of the demo tracks, it did not show the tune - simply the volume control. It was on a seperate track to the actual tune!

It doesn't sound like you followed the instructions I suggested above. You'll have to explain more clearly what you did.
