Because I was under the impression that didn't work - hence the needlessly expensive MIDI interfaces like iRig and MIDI Mobilizer.

Yeah if it works as smoothly as it does in the video... maybe. The Kinect didn't work for me as a controller because i don't like jigging around to do stuff. And the Wiimote is fine for movements contained to it (like controlling a theremin) but trying to control a cursor on a screen is painful.
