I've migrated from Cubase - I use an outboard mixer with a stereo output, and I used to highlight two tracks in Cubase, pan the two inputs on the mixer hard left and right, and Cubase would record two discrete tracks (for example, acoustic guitar on one and a vocal on the other)
I've tried to do this in MuLab but I cannot figure it out. So I want the left input to record to one track and the right to the other. Can someone help me? When I try to record audio, it sometimes puts it on a completely new track instead of the one I want it on too, so I think I'm doing something fundamentally incorrectly...thanks!

There are several ways to record mono signals on different tracks:

In the Audio Recording Setup select your mono sources in the Record From fields and set Channels to Mono.
Another way would be in the Session MUX (= Setup button in the Audio Recording Setup)

Create a Stereo Splitter module and route the two sides to different recorders.
If you want the recordings on specific tracks, either just record and move the parts, or set the Monitor To to the required racks (assuming these racks are the target of your required tracks). See the result in the above picture.
First picture will record to new tracks, second picture to the Rack 1 and Rack 2 tracks.
You can create as many Audio Inputs as you like / have available. Each can be setup as Mono or Stereo input. Create your setup once and save it as template or even as the New template.
