Problems With Midi

I'm getting into a bit of a mess recording midi parts.

1. When I create a new midi clip, do I select the program (instrument) in the clip, or in the input device?

2. If I use different midi instruments (e.g. bass, organ), do I have to make sure that they are on different channels?

3. Does the volume and pan filter have any effect on a midi clip (mine doesn't). In that case, how do I mix midi clips?

I'm enjoying using Tracktion, but I don't feel that I'm yet in control of midi, although I have used it successfully in other sequencers.

Any help would be appreciated.
